June Goals!

Quick little post of what my June goals are....

- complete the Epic Summer Slim Down Challenge!
- go to bootcamp minimum 3 days a week but ideally all 5 days with saturday run!
- track food 100%! 
- finish quarter 2 at work strong!
- plan ahead and stick to my plans!

Week 2 recap

Week 2 recap - long story short it was a sort of an off week. To say I gave into my cravings this week is a total understatement. So to really explain my week here are a ton of pictures - my favorite! 😜

Monday - was a super successful day starting with superhero day at bootcamp and then ended at Disneyland!

Tuesday was also a pretty awesome day. Started with bootcamp, grocery shopping, mini meal prep, full day of work and then ended with a 4 mile run that gave me a new PR for 5k!!

Wednesday was crazy! I woke up in extreme pain thanks to being a woman and it was the worst I have had in a very long time! My cravings were off the wall and I had a ridiculously long day at work. Unfortunately missed bootcamp...

Thursday again no bootcamp but I made an effort to eat a little better.

Friday - final day of no bootcamp. Finally feeling a little better but food was way off track! We went to food truck row.

Saturday was back on track with starting the morning going back to bootcamp! Food was semi on track.

We had dinner at our friends house. Tri tip, salad, mashed potatoes, parmasean cauliflower, brazilian cheese bread, and sangria! Sooo delicious!!

Sunday was pretty good. Completed a ton of housework and errands.
Tried some chocolate shakeology for the first time. Not a fan but will try it tomorrow with some milk instead of water.
Had a delicious lunch at sharkys again. Love that naked chicken fajita bowl!
Had a super successful shopping trip to whole foods!
And roasted some delicious veggies and had pork tenderloin for dinner

End of Week 1 recap

This has been an incredible activity week!! I attended all 5 days of bootcamp, my Tuesday night run and my Saturday morning hike! I also tracked 100% of what I ate even though from Thursday - Sunday it really wasn't very healthy or "clean". Woops! But it's ok. Still very proud of myself for how this week turned out.

Week recap


I really enjoyed bootcamp and the hike! So far, I have learned I do not like burpees or any type of rope smacks but anything with my legs isn't too bad haha oh and I can't jump rope to save my life! I don't know if my timing is off or what but I can do like 5-10 in a row and then I end up jumping at the wrong time and catching the rope on my shins haha I think it's funny to see lol

My favorite recipe this week:
Definitely the crock pot salsa chicken! Super easy! 

Lined the crock pot and put in 3 cleaned and trimmed chicken breasts

Poured half a jar of salsa and 1/2 cup of fresh pico de gallo 

Set it on low for ~7 hours and it was delicious and just shred apart! 

Biggest struggle this week:
We had a few nights of celebrating my mom-in-laws birthday and I didnt necessarily make the best choices in food. But we had a fun time and it was only for a few nights.

Friday night was at The Edison in LA


Overall:
Pretty damn good week 1 activity wise. Eh effort for food wise. Looking forward to a solid week 2 - well minus Memorial Day haha I went to Disneyland and totally are in the park. But more about that in week 2 blog!
